I've noticed that in Dynamic Forms API reference and tutorial only limited number of gs tags are mentioned.
Where can we learn about all gs tags we can use in Dynamic Forms, for example pane, container, tabs etc. as well as default icon set?

Unfortunately the only gs tags that exist at present are the tags mentioned in the Dynamic Forms API reference.
You can however created your own tags using HTML since gs tags are based on HTML.
